How to build structure into a drink with no alcohol in it

Almost everything written about non-alcoholic drinks starts from what has been taken away. This starts from what has to be put back, and why.

What alcohol was doing

Ethanol is not a flavour. It is a piece of structure, and it does at least five jobs at once in a glass of wine.

It carries aroma. Volatile compounds dissolve in it and leave the surface of the liquid with it, which is why a wine opens as it warms and why the same wine smells like almost nothing at four degrees. It gives weight — ethanol is more viscous than water, and it is most of the reason a wine feels like something rather than like a thin drink. It reads as sweet on the palate at the concentrations wine carries, without any sugar being present. It suppresses bitterness, which is why a heavily tannic red is drinkable at all. And it gives length: the finish of a wine is largely alcohol holding aroma against the palate after the liquid has gone.

Take it out and all five stop at once. That is the real problem, and it is why removing alcohol from a finished wine does not work. Vacuum distillation and reverse osmosis pull the ethanol out along with the aromatics that were dissolved in it, and what is left is a thin, sweet, short liquid that tastes like a memory of the wine it used to be. Producers then add back sugar and grape concentrate to give it body, which fixes the weight and makes the shortness worse.

The alternative is to never put the alcohol in, and to build each of those five functions from something else. That is a different craft from winemaking, and it is closer to cooking.

Four decisions before any flavour

Structure before flavour. Acid, tannin, salt and length are decided first, and the flavour goes on top of them. It is the same order a stock is built in. A drink designed the other way round — an interesting flavour, then a search for something to carry it — collapses on the second sip, because there is nothing underneath.

Absence, not removal. Nothing is stripped out of anything. The drink is built without alcohol from the first step, so nothing has to be replaced after the fact.

Small batches. Every element is extracted by hand, blended and rested. Batch size is set by what can be tasted properly, not by what can be filled.

Made for courses. A tasting menu is a progression. It is not served one good drink; it is served a sequence, each course setting up the next. A single well-made bottle cannot do that, which is why the range is a flight rather than a product.

Extraction: one thing at a time

The instinct is to build a drink the way you build a tea — put everything in the water and let it steep. It does not work, because the things you are extracting do not want the same conditions.

Tannin comes out of tea leaves quickly and then keeps coming, turning from grip into astringency somewhere past the point you wanted. Glutamates come out of kombu slowly and are destroyed by heat, so kombu is left in cold water overnight and never boiled. The oils and Maillard compounds in nuts need heat before they exist at all — they are created in the roast, not extracted from the raw nut. Bitterness from roots and barks needs a long, warm, patient extraction that would ruin every one of the above.

So each element is extracted alone, on its own terms, and held separately:

  • Nuts toasted until the room smells of marzipan, then extracted warm
  • Kombu cold overnight, never heated
  • Tea to the minute, then out before it turns

That is more work and more vessels than a single infusion, and it is the only way each element arrives at full strength without dragging something spoiled in with it.

Seasoning: acid last

Once the elements exist, the drink is seasoned rather than mixed.

Sugar goes in first, in two-gram steps. It is not there to make the drink sweet — most of the range sits under 10 g/L, which is drier than almost any soft drink and drier than most wines. It is there for body, doing part of the job ethanol's viscosity used to do. Two grams per litre is small enough that you can taste the step and stop at the right one.

Salt goes in next, in pinches. Salt does two things that matter here. It lengthens — a salted drink stays on the palate measurably longer than the same drink unsalted. And it suppresses bitterness, taking over one of ethanol's jobs directly, which is what lets a genuinely bitter drink stay drinkable.

Acid goes in last, and this is the part that is easiest to get wrong. Acid is the spine: it cuts richness, it keeps the drink moving, and it is most of what makes something taste finished rather than flat. But it also flattens sweetness perception, so if you set the sugar after the acid you will chase your own tail and end up sweeter than you meant. Set the sugar, salt it, then acidify.

The target is an acidity, not a sweetness. A drink is finished when it lands at the acidity the course needs, and the sugar is whatever it took to balance that.

The blend, and then four weeks of nothing

The elements meet only at the end, in small batches, and every change is written down. Not for ceremony — a blend that cannot be reproduced is not a product, it is an accident. Batch records are the difference between a recipe and a one-off.

Then the drink is left alone for four weeks before it is released.

This is the step most people skip, and it is the one that matters most. A freshly blended drink tastes like its parts. Every element is still identifiable, the acid sits on top rather than through it, and the tannin is angular. After a few weeks the same liquid reads as one thing. Nothing has been added and nothing has fermented — the components have simply integrated, the way a sauce does overnight or a marinade does by the second day. Tasted at week one, a batch can seem to have gone wrong. Tasted at week four, it is what it was designed to be.

What that leaves in the glass

Which is the whole method in one line: salt for length, tannin for grip, bitterness for the finish.

The drinks are still, not sparkling — carbonation is a way of hiding a thin drink behind texture, and a drink with real structure does not need it. They are hot filled and high in acid, so they are shelf stable at room temperature for twelve months with no cold chain. Most of them contain caffeine, because most of them are built on tea, which is worth knowing before you pour a full flight at half past nine.

And they are 0.0% ABV — not 0.5%, not de-alcoholised. There was never any alcohol in them to remove.
